CASHEW RICE WITH DICED POTATOES FROM LISA' S KITCHEN

This delicious recipe is from Lisa's Vegetarian Kitchen for Tried and Tasted. Where she cooks very different and delicious vegetarian recipes, they are really tempting for me mmmm yum yum. Actually I tried some other recipes also from her but this one is a really hit at my place. So I am here with the recipe. But I made some little changes like I didn't soak the rice for over night as she said and I used only ghee hummm that’s it I think yes….

INGREDIENTS:---
FOR GARAM MASALA:---
Black pepper corns --- 1 tea sp
Cloves ---- 10 no.
Cinnamon --- 2 inch pieces 2no.
Coriander seeds --- 1 tab sp
Cumin seeds -- 1 tab sp
Sesame seeds --- 1 tab sp
Grated fresh coconut --- 3 tab sp
For Rice:----
Basmati rice --- 1 and 1/2 cup
ghee --- 4 tab sp
Cashew nuts -- 3/4 cup broken
Ginger --- 1 tab sp finely chopped
Green chilies -- 3 tea sp chopped
Cumin seeds --- 1 tea sp
Mustard seeds --- 1/2 tea sp
Curry leaves --- 10 no.
Potato --- 1 big cut in to cubes
Fresh cooconut for garnishing (about 3 tab sp)
Fresh coriander for garnishing(about tab sp) (These two ingredients are optional)
METHOD:---
1. Soak rice For 1/2 hour.
2. Dry roast all Garam masala ingredients in a fry pan and fry about 5 min. and then grind in to a fine powder.
3. Cover and leave a side(store this garam masala powder in a air tight container and its aroma is just simply superb).
4. Now heat ghee in a heavy bottom pan and fry cashew nut s till golden and remove and leave a side.
5. Now in the same pan add mustard seeds and let them poup then add cumin seeds and then add chopped ginger and green chilies,curry leaves fry for a while and then add potato cubes and fry till potato cubes become nicely browned.
6. Now add rice (drain the water in to a bowl so that we can use the same water to cook the rice.) turmeric and salt and stir fry about 1 min.
7. Now pour water and add garam masala and fried cashew nuts. Mix well and bring to a full boil and reduce the heat,cover with a lid and cook in a very low flame till done. Yes it will take 20 min.
8. Remove from the heat and leave for 5 min.then garnish with grated coconut and coriander leaves.
9. I served this aromatic rice with onion raita and pappad we just loved it....
