Radha Vallabhi

Today we are going to start second week of Mega Blogging Marathon. This week in Buffet on Table we are going to present  recipes from Indian States. In this theme we have to cook one dish or a thali from each state and each day a state for six days.
                                                                       For this second week My first two recipes are Breakfast recipes. The first recipe is from Bengal, Radha Vallabhi .. This is a very popular and favorite breakfast in Bengal. Which you can find any sweet shops in breakfast time. Radha Vallabhi Beautiful name right I don't know why this name given to this delicious dish. Radha Vallabhi almost looks like a poori but the recipe is different. This is a stuffed puri with dal mixture, you can stuff this puri with channa dal or urad dal mixture. Some places this is known as Hinger Kochuri may be because of the flavor of asafoetida in the stuffing. Radha Vallabhi is usually served with Cholar dal and Dum Aloo. This is consider as a festive breakfast.
                                                                        Not only in Bengal this a special breakfast in Orissa also. Particularly in Puri Jagannath Temple this will be served in chappan bhog as Maha prasad.. 
                                                              I used urad dall for stuffing btu you cam make with channadal also, I tried  both but we liked urad dall stuffing.
                                                                               

So let's check the recipe for this delicious dish.....
INGREDIENTS:---
FOR DOUGH:--
Maida   ----   1 cup
Ghee  ---  1 tea sp
Salt  a big pinch
Warm water for kneading the dough
Oil for deep frying
FOR FILLING:---
Dhuli urad dal (dehusked urad dal, chaya minapappu) ---  1/2 cup (you can use channa dal also)
Ginger  ---  1/2 inch piece grated
Green chillies  ---  2 choppped
Fresh coriander leaves  ---  2 tab sp chopped
Cumin seeds  ---  1/2 tea sp
Fennel seeds  ---  1/2 tea sp
Coriander seeds  ---  1/2 tea sp
Red chilli powder  ---  1 tea sp
Oil    ------  2 tea sp
Asafoetida  ---   1 pinch
Salt to taste
METHOD:---
1. Soak dal for two hours.
2. In a grinder (mixer grinder) grind together dal, ginger, green chilli, cumin, coriander seeds, fennale seeds, red chilli powder, coriander leaves in to a coarse paste.
3. In a heavy bottom pan heat 2 tea sp oil add this dal paste and keep stirring till the paste cooked and thick dough formed (the dal dough should become like a ball). Switch off the heat and let it cool.
4. Now in a mixing bowl take maida, ghee and salt and mix well, add warm water and knead a stiff dough cover the dough and set a side for 15 minutes.
5. Make balls out the dough and flatten a ball about three inch disk.
6. Place a tea sp full of dal mixture in the center and bring all the sides together of the disk, again give a ball shape.
7. Slightly flaten in between your hands then roll in to three and half inch puri with the help of rolling pin. Make all the puri's and keep them ready.
8. Heat oil in a deep frying pan and fry the puri's in a medium heat till golden both sides.
Remove from oil and serve hot with cholar dal and dum aloo...
