SAMBAR VADA




I first eat this sambar vada in Chennai saravana bhavan .Iliked it very much,From that time this one become one of my dinner special .If you have 2 vadas with sambar that will be enough for me for dinner. this one is specially from Tamil nadu,Inever see this iteam any were in andhra.And the recipe is...


For VADAS:-


1 cup -ura dal


salt to taste


oil for frying


Soak dal in water for 2-3 hours and drain water and griend dall in to a smooth paste dont add water while grieding. Remove and add salt [If you want you can add chopped onion and green chillis to the vada batter] and give a shape like dough nuts and droop them in hot oil and fry till golden colour.Remove from oil and drop them in to hot sambar.




FOR SAMBAR:-


1 cup -toor dal


1. wash and soak toor dal for 10 min. and cook till soft and mash and keep a side.


2. soak lemon sized tamarind and extract juice with 1 cup water and keep a side.


3.Cut vegetables like carrot ,bottle gourd,tomato,onion[they should be one carrot 1/2 cup bottle gourd pieces ,1medium tomato,1medium onion ,3green chillis]


4. cook vegetables in 1 cup water with 1/2 teasp-turmeric and 1/2 teasp-salt till vegetables are cooked.


5.now add tamarind juice,1tesp-chilli powder and boil till raw smell of the tamarind will dissappear.


6.now add cooked dal mix well and let it boil till one boil then add sambar powder 1teasp,jaggury-1teasp check and add salt ,curry leaves,chopped coriender leaves and mix well.


7.now heat 1teasp-oil in a pan add mustard seeds and 1/2 teasp-asafoetida and add this to sambar.


sambar is ready to serve, serve hot with plain rice[or] vadas[or] idlis.


I think this is a protein rich food because Iused urd dal and toor dal , dals and lentils are very rich in proteins so......

SAJJAPPALU




Some times amma use to make this sweet for festivals.When ever she wants to replace bobattu she prepares this sweet poli[sajjappalu].Ithink people forgot this one I remember that long back means 7-8 years ago in andhra every marrage lunch this should be a sweet dish,! If I am not mistake.Idont know why people forgot this easy to make sweet roti.Some people prepares this one like puri means all the method is same but deep fry them like puri in hot oil.But Idont like that version because that takes oil alot frying like parathas is ok,useing less oil is good for helth any way the recipe is like this.........




For dough:-


maida---1cup -1/2 cup weat flour[atta]


water for making dough


A pinch of salt


1tesp ghee


Take a bowl mix weat flour, maida and salt,ghee add water and make a soft dough leave for 1/2 hour.


1cup-samolina


1cup--sugar


2cups-water


a pinch red food colour


1/2 tesp-cordomom powder


1tebsp-ghee


Heat ghee in a pan add samolina fry till golden add sugar and water mix well add food colour keep stiring add cordomom powder cook till soft or till done.


Remove from fire and let it cool after it cool down make small lemon size balls and keep a side


Take dough make small balls press in to small puris keep samolina ball in the middle cover from all sides and press in to round rotis


And fry this sweet rotis with 1teasp ghee fry till golden colour.


Serve hot with ghee and condenced milk

NIMMAKAYA PULIHORA[lemon rice]



LEMON RICE IS ONE OF THE TRADITIONAL SOUTH INDIAN RICE DISH WHICH IS VERY LIGHT AND EASY TO MAKE .AND AVERY COMFORT FOOD FOR JURNEYS AND A PERFECT CHOICE FOR LUNCH BOX. AND THIS ONE IS ALWAY MY FAVORITE AS A BREAK FAST.WHEN EVRE I MAKE THIS FOR MY HUBBY S LUNCH BOX(FOR HIS LUNCH) AND I WILL FINISH IT UP FOR MY BREAK FAST

INGREDIENTS:---
RICE -- 1 AND 1/2 CUP
LEMON JUICE --- 3-4 TAB SP
TURMERIC --- 1/2 tea sp
PEA NUT S ---- 1/2 cup
CHANNA DAL --- 1tab sp
GREEN CHILIES -- 5 CUT IN TO SMALL PIECES
MUSTARD SEEDS --- 1/2 tea sp
GINGER CHOPPED--- 1/2 tea sp
CURRY LEAVES --- 12
CASHEW NUTS --- 10
ASAFOETIDA --- 1/4 tea sp
OIL --- 1 tab sp
SALT TO TASTE

METHOD:----
1. SOAK RICE IN WATER FOR 10 MIN.THEN ADD TURMERIC POWDER AND COOK TILL DONE .
2. SPREAD RICE IN A PLATE TO COOL.
3. HEAT OIL IN A PAN ADD MUSTARD SEEDS LET THEM POPUP THEN ADD PEANUTS AND CASHEW NUTS AND FRY FOR AFEW MIN.
4. THEN ADD CHANNA DAL,CHOPPED GINGER, GREEN CHILIES,ASAFOETIDA AND CURRY LEAVES AND STIR ONCE.
5. NOW SWITCH OFF THE FLAME AND ADD SALT TO TASTE AND LEMON JUICE MIX WELL AND ADD THIS TO RICE AND MIX WELL TO COMBINE.
6. ADJUST SALT AND LEMON JUICE ACCORDING TO YOUR TASTE.
7.COVER WITH ALID AND LEAVE A SIDE FOR 10 MIN. THEN SERVE.

WATER MELON KOOTU






Yes water melon kootu this is a very tasty and helthy one Ihope you people like this.And this will go very well with rice and roti.And recipe is like this



INGREDIENTS:-



1 cup-water melon cubes[peal outer green skin and red flesh part you can use between red flesh and green skin that wight part cut in to cubes]



1cup-split uard dal



1tebsp-grated coconut



4-5-green chillis



1tesp-cumin seeds



1/2 tesp-mustard seeds



1pinch-asafoetida



a few curry leaves



turmeric powder-1/4tesp



salt to taste



1tebsp-oil



METHOD:-



Heat a pan and add uard dall and dry rost till golden colour and add 1cup water and water melon cubes.Add salt and turmeric and let it cook till soft



Grind grated coconut and green chillis,cumin seeds in to a coarse paste and add this to dal and water melon mixture and let it cook till dal become soft



Heat oil in a pan add mustard seeds,asafoetida and currry leaves and add this to cooked dal mixture.


Remove from fire and serve hot with rice or roti


You can use moong dal also for this

MANGO CURD PUDDING




Before Iuse to make this curd pudding plain. Suddenly When Iwas thinking about that Igot this idea, to try my curd pudding with ripe mangoes. I tryed it dought fully whether it work out or not I don't know but it came out wery well and it tastes good.Ihope you people like it and the recipe is


INGREDIENTS:-


condensed milk--11/4cup


yogurt----1cup


milk---1cup


mango pulp-1/2cup


mango peaces-1/2cup[bite size]


cordomom powder-1/2teasp


no need to add sugar condence milk sweet is enough if you want more sweet you can add 1/4 cup sugar.
this recipe is another entry for siri's frozen -yogurt-cool-summer-event


METHOD:-

Heat milk and keep a side .take condence milk and curd in a bowl and mix them well .Then add mango pulp and milk mix it well and add mango peaces .pour in to abowl and seetm cook for 1/2 hour after 1/2 hout open it and see ,if it is not done again you can keep it for another 15 min.

Remove from steem and let it cool ,chill it in the fridge and serve chill with wipp cream.

Ilike to eat Indo-chinese ther is a restaurant in Bangalore,in indranagar when ever i go to india 100% ivisit that restaurant one time. They named as chinese reataurant but that is a tipical indo-chinese i think and the food in that place is mmmmmmm long back I had this broccoli stir fry in one restaurant hear in abudhabi before that Inever tasted broccoli and from that time I added broccoli in my weekly vegetables list broccoli is good in preventing cancer. and here is the recipe

INGREDIENTS:-

Broccoli-1no.

mashrooms-250gms

garlic-5pods-finely chopped

black pepper corns--1teasp-crushed

spring onion chopped-1cup

oil-2teasps

soya sauce-2teasps

corn flour-1/2tesp

water-1tebsp

MSG--1/2tesp-optional

hot tomato sauce-1tesp-optional

salt to taste

METHOD:-

1cut broccoli in ti bite size peaces and dip them in hot water for 2min. remove and rince in cold water and keep a side.

2.cut mashrooms in to 4 peaces.Heat oil ina wok add garlic and wight part of spring onion fry for a few sec.

3.then add mashrooms keep stiring after a few sec. add broccoli stir fry for 2min, now add soya sauce and tomato sauce and crushed pepper.MSG and stir fry for few sec.,dissolve corn flour in water and add and fry for 1sec. and remove from fire and serve hot with plain rice or fried rice even with noodles

TENDER COCONUT WATER AND PINEAPPLE JUICE Tasty Palettes: Announcing AFAM - June '08



Hear one more fresh and helthy juice for my refreshments lable and also for The fruitof the month-AFAM:coconut ,hear i go with the recipe.....


Tender coconut water--1 tin or250ml

1cup chopped--pineapple

4-6---lychees-de seeded

5 ice cubes


crush pineapple and lychees in a blender then add coconut water and ice cubes and run for5secs. serve chill.If you need you can add 2tesps sugar or honey

PINEAPPLE RICE




This rice verietie is with lots of pineapple and dry fruits so this rice is very rich in protein and very tastey also.Good choice for lunch box.


INGREDIENTS:-


11/2cup--cooked rice


1/2 cup-pineapple finely chopped


1/4cup-cashew nuts


1/4cup-raisens


1/2 cup-ground nuts


1small onion-chopped


2medium-tomatos chopped


1tebsp-oil


1/2tesp-mustard seeds


1tesp -cumin seeds


2cloves-garlic finly chopped


a few curry leaves


1tesp- red chilli powder


1/2tesp--turmeric powder


1tesp-coriander powder


salt to taste
1tebsp-chopped coriander leaves
1tebsp-chopped-spring onion


METHOD:-

Heat oil in a kadai add mustard seeds let it popup then add cumin seeds,chopped garlic ,cashew nuts. ground nuts,and chopped onion and fry onion till soft.

now add chopped tomato,chilli powder, salt to taste,turmeric powder, coriander powder and chopped pineapple mix well and cover and cook for 5-6mins. means it leaves oil on the sides

now open and add chopped spring onion chopped corianderleaves ,cookd rice and mix well togather to mix all ingredients combain well remove from fire and serve with curd

ingrdients;- munakkaya -mamidikaya kura with out egg

drumstick--2no.s


mango--1medium size


onion--- 1 medium size


tomato--3medium size


ginger garlic paste--1tesp


red chilli powder---1tesp


turmeric powder--1/2tesp


salt to taste


coriander powder--1tesp


mustard seeds--1/2tesp


cumin seeds-1tesp


a few curry leaves


oil--1tebsp


METHOD:-


choop onion and tomato and keep a side cut drum stick in to 1inch peaces mango in to bite size peaces.


heat oil in a pan add mustard seeds let them popup add cumin seeds and curry leaves then add chopped onion fry till onion became soft now add drumstick peaces cover and cook for 5 mins.


open the lid add ginger garlic paste , coriander powder, chilli powder turmeric powder,salt to taste mix well and add chopped tomato and mango peaces sprikle alittle water and cover and cook for8-10 mins. mix in between cook in a low flame remove from fire and serve with rice or roti


You can add hord boild eggs to this curry add them when you add mango peaces since Iam a pure vegerarian Iwont eat egg also so I added eggs for my hubby .

Yes this is a protein rich roti Ican say,Imade this roti with lots of dry fruits.Dry fruits are very rich in proteins,Iused 1.100gms cashewhas--18.22g of proteinsand also very good in carbohydrates 2.100gms--almonds has 22g of proteins,and indian ayurveda says almonda are very good for brian and memory power3.100gms walnuts has 15.23gms of proteins,it controls bad cholesterol level and very high in Antioxidants 4. Iused Dates in 100gms dates only 2.5gms of proteins but they are very rich in iron.Some kids they dont like dry fruits like those kids i think this will be a good idea.After fasting if we have one roti we can get a lot of energy.......and the recipe is hear

100gms--cashew nuts



100gms--almonds



100gms--wal nuts



1/2 cup--dry coconut



10no---dates chopped



3-4 cordomoms

METHOD:-



1.choop dates in to a very small peaces keep a side.



2.grind all dry fruits in to a powder and mix with dates and mash well make a small lemon sized balls.


3.take paratha dough and make small balls and roll in to small puris


4.keep dry fruit ball in the middle of the puri and close from all sides and press them in to round roties


5.heat tawa and fry roties with oil or ghee both sides


remove from tawa and serve hot with honey

vankaya-munakkaya pulusu[brinjal and drumstick in tamarind sauce]


This is a good choice for pongali[pongal].Very testy and also well go with plain rice and dosas and idlis also.Every time we make coconut chutney for idlis and dosas for a change we can make this Ilike this one as a side dish for parathas also.

INGRDIENTS:-

250 gms--brinjal

1no--drumstick

1big-onion

1medium-tomato

1tesp-chilli powder

1/2tesp--coriander powder

1/2tesp-cumin powder

1/2tesp-turmeric powder

salt to taste

50 gms tamarind

1/tesp-mustard seeds

1tesp-uard dal

1tesp-cumin seeds

1/4tesp-menthi seeds[fenugreek seeds]

3 cloves-garlic chopped

afew curry leaves

1tebsp-oil

METHD:-

1.cut each brinjal in to 4 peaces and drumstick into 1inch peaces.

2. choope onion amd tomato and keep a side

3.soak tamarind in water and extract juice with 1cip of water

4.heat oil in sauce pan add mustard let it popup then add cumin seeds,menthi seeds uard dal. chopped garlic and cury leaves

5.now add chopped onion fry till soft then add chopped tomato and coriander powder,cumin powder,turmeric powder,chillipowder and salt mix well and let it cok till oil comes out

6.now add drumsrtick peaces sprinkl 1tebspwater cover and let it cook for 5mins.

7 now open and add brinjal peaces mix once and add tamarind juice and let it cook till the raw smell of the tamarind will disappears and sauce become little thicker means it will take 15-20 mins.in a low flame

my nanamma [grand mother]she use to add 1tebsp-cooked and mashed toor dal to make thick to this some times Iwill do that but now I did'int add toor dal if you want you can add

serve with pongali,dosas,idlis or plain rice.This will tastes better next day,withcurd rice

KATTE PONGALI[ven pongal][rice with split moong beans]


Again one more prasadam from tirupathi temple.This is also atraditional rice varirtie from south india and this is a idel break fast easy to cook and helty also.And the recipe is here

INGREDIENTS:-

1cup---rice

1/2 cup--moong dal[split green garm,pesarapappu]

1/4 cup--ghee

1/4 cup-cashew nuts

2teasps-cumin seeds

2teasps--black pepper corns

1 inch peace-ginger chopped

a few curry leaves

a pinch asafoitida[hing,inguva]
salt to taste

METHOD:-

1. mix rice and dal wash and add 4 cups of water do this process in a pressure cooker add chopped ginger and asafoetida,salt
2. heat ghee in a pan fry cashews remove and keep a side then add cumin seeds,black pepper corns,curry leaves let it popup add this to rice cover and cook for 2 whistles.
3.remove from heat and let it cool ,open and add fried cashews mix well
serve hot with coconut chutney or pickle,
I served with brinjal and drumstick stew[brinjal and drumstick pulusu]

this recipe is from Middli Eastern Cuisine.When I first came hear I was thinking that Middle Eastern cusine dosent have any vege.recipes but i was wrong they have alot.When Itaste this sweet Iliked it very much because they are like what my amma makes with uard dal paste and I was serching for the recipe and one fine day i got the recipe in one cook book and itryed it came out well so.. this is that recipe And this is my one more entry for siri's Frozen Yogurt-A cool summer event at siri's-corner

INGREDIENTS:-

21/2 cups---All-purpose flour[maida]

21/2 cups---Yogurt

1/2 teasp--yeast

oil for frying

5 cups --sugar syrup to make sugar syup add sugar and water in a pan and boil it and make a syrup like what we make jamuns little thicker then that means this syrup have to coat the dumplings

METHOD:-

1. mix flour with yeast and fold in the yogurt

2.keep mixing to get afairly but sqeezable consistency

3.covre the dough ans keot it a side in medium temperature,plce until double in size

4.fill a pouring bag with the dough and in to the wok with hot oil squeez out small lemon size balls

5.keep on turning the balls until they are evenly golden brown in colour

6.remove and dunk inthe syrup

7.when they are soft remove and shake off excess syrup and serve warm

BENDAKAYA PAPPUCHARU[okra lentil stew]


Compare to sambar I think this is very delicious and easy to make no need to add any sambar powder.This is a tamarind based lentil stew cooked with lots of vegetables Not only okra you can add many different vegetables like bottle gourd ,drumstick,eggplant,radish,carrot,pumpkin.You can mix any 2-3 vegetables or only with one also you can make this but each vegetable gives there own taste.
INGRDIENTS:-
1/2cup--toor dal[kandi pappu,split pigeon pea]
1medium sized--onion
1medium sized--tomato
1/2kg--okra[bendakaya]-cut in to 1inch cubes
4-green chillis-slit
50 gms-tamarind[a small lemon size]
1/2tesp--red chilli powder
1/4tesp--turmeric powder
salt to taste
afew curry leaves
a few coriender leaves
a pinch of asafoitida
1/2tesp--mustard seeds
1/2tesp-cumin seeds
METHOD:-
1.Cook toor dal in water till soft mash and keep a side[you can cook dal in pressure cooker also]
2. Slice onions and tomatos and keep a side
3.Soak tamarind in water and extract juice in 1 cup water and keep a side.
4.heat 2tesps oil in a pan add onions[sliced] and fry till soft then add tomatos fry for 2 mins now add okra peaces and add salt and let it cook till okra cooked
5.now add tamarind juice and red chilli powder ,turmeric powder mix one time let it cook till raw smell of tamarind disappears.Let it boil for 10-15mins.
now add cook and mashed toor dal mix well and bring to a boil.and remove from heat.
7.Heat oil in a pan add mustard let it popup then add cumin seeds,asafoetida and add this to dal and tamarind mixture mix and cover and leave for 10-15 mins then serve,serve with plain rice and papad.That will be a full meal for the day.

RAW CAULIFLOWER-GARLIC PARATHA Cooking 4 all Seasons: Announcing an event to Celebrate Indian Flatbread ~ Roti Mela!




Before Iuse to make cauliflower parathas with cooked cauliflower but when I tryed this one's.I liked it very much and they are very tastey .This is how I prepared them
INGREDIENTS:-
1/2 medium sized-cauliflower-greated
2-green chillis--chopped
3cloves-garlic-finely chopped
2cups-atta
salt to taste
METHOD:-
Take all above ingredients in a bowl and knead dough and leave for 10 min.
divide dough in to small balls and roll each ball in to circles of 7-8 inches diameters with the help of rollingpin
Heat apan put 1tesp oil place paratha on it sprinkle sam more oil on top of it and sides of paratha
Fry bouth sides in golden color remove from pan and serve hot with curd and salad

INSTANT PEA NUT CHUTNIE[ground nut]




This chutnie is from my sister radha few days back when Iwas talking to her that time she gave me this recipe,I just tryed that one this morning realy it is very tastey and very easy to make


INGREDIENTS:-


1/2cup--greated coconur


4-5---green chillis


2tebsps--pea nut butter[chunky][Iused American garden chunky pea nut butter


Griend all ingredients in to a smooth paste and take it out in ti a bowl

For tempering:-

1/2tesp--mustard seeds

1/2teasp--uard

1/2teasp--cumin seeds

a few curry leaves

1tesp--oil

heat oil in a small pan add mustard seeds let it popup then add uard,cumin seeds ,curry leaves let them fry for 2min. and add it to chutnie

Iserve this chutnie with godhuma dosa[wheat pan cakes]

Hear one more paratha for my rotis and parathas lable This parathas are very high in protiens.I am useing fryied gram for this parathas fried gram--putnalu-- pori kadalai If you have idli podi in hand you can use that also or you can make a powder with 1cup-fryied gram[putnalu],1tesp-cumin,1/2tesp--salt,1/2tesp--redchilli powder,2 cloves-garlic make a smooth powder and you can use it for filling.






INGREDIENTS:-



1cup--fryied gram powder[putnala podi]



2-3--green chillies-chopped



1/2cup--coriender chopped



1/2tesp-lemon juice



1tesp--garlic chopped



salt to taste



1/2tesp--ajwain[vaamu]



1/2tesp--cumin seeds



Mix all the ingredients in a bowl [you can add alittle water just sprinkil to make balls] and make a small lemon size balls and keep a side



make dough like as per normal parethas and leave for 1/2 hour ,and make small balls and press small puries and keep the masala ball on it and close from all sides.



and press like round roties little thicker then normal roti.



Heat atawaand fry the paratha both sides with 1tesp-oil[if you are giving to kids you can fry with ghee]



serve hot with sweet curd[mix curd with 1tesp sugar or greated jaggery]and lauki[sorakaya plain kura]sabji

Smoothies are my all time favourite,fruites with milk or curd[Yogurt] with a little honey or sugar.Wpw in this hot summer afternoons inU.A.E. smoothies or cool juices will give a lot of energy ,and hear I go with the recipes of some different smoothies.Ihave adopted this recipe from KRAFT FOODS
INGRDIENTS:-
11/2 cup--milk
1/2 cup--venilla low fat yogutr
1small-banana cut in to chunks
4tebsps-tang orange flavour drink mix
METHOD:-
Place all ingredients in to a blender blend untill smoth and serve immedietely
This is for 2 servings
As per recipe owner says Idid'nt add any sugar or honey to the smoothie so this is a low cal... drink Ican say.

WATER MELON SHAKE - 1


Water melon pieces--1cup
milk-----1/2cup
cordamom powder--1/2teasp
Aad this ingredients to the juicer and run for few sec.If you want to add sugar it will take 2 spoons sugar or you can add honey also.serve chilld

CAPSICUM AND PEA NUT RICE

1 cup--- cooked basmati rice


1no--onion sliced


1cup--capsicum cut in ti cubes


1cup-tomato chopped


2cloves-garlic chopped


1cup-pea nuts crushed[dry rost pea nuts in a pan and crush them]


2tesps--oil


1teasp--cumin


a few curry leaves


1/2tesp--chilli powder


1/2tesp--turmeric powder


salt to taste


METHOD:-


1.heat oil in a pan add cumin and let it pop up then add sliced onion fry for 1minute.


2.now add chopped garlic and capsicum cubes and fry for 2minutes and add tomato cubes and let it cook till tomato become soft


3.now add chilli powder, turmeric powder, crushed pea nuts and salt to taste stir for one time and add cooked rice


4. mix well make sure that all ingredients are mixed well.


This risc is a good choice for lunch box


Igave beetroot salad and some fruits for lunch with this rice to my hubby

1--orange[or you can add 1/2 cup fresh orange juice]

process through a juicer fruits and honey and serve chilled.


if you want to use sugar you can that will take 2tebsps sugar that is your choice.you can replace sugar with honey.

VEGETABLE DUM BIRYANI


Today iam going to share with you my version of vegitable dum biryani.What i make with rice and lot of vegetables and spices.Ithink this is a simple way to make a dum biryani.

INGREDIENTS:-

11/2cup--basmati rice

1cup--mix vegetables[cut vegetables in to half inch cubes like carrots,french beens,potato,califlower and green peas]

whole garam masala--1inch peace-cinamon,4-cloves,4-green cordamoms

1/2cup chopped -coriender

1/4cup -chopped mint[pudina]

1-onion-sliced

4-green chillies-slit

1/2 tesp-garam masala powder

1/2tesp-red chilli powder[you can remove red chilli powder according to your taste]

1/4tesp-turmeric powder

1tesp-ginger garlic paste

1/2cup --curd[yogurt]

salt to taste

2tebsps--ghee or oil

METHOD:-

1.cut vegetables in to 1 inch cubes and keep a side,slice onion and fry 1/4 in brown color for garnishing and keep aside chope coriender and mint keep a side mix curd and ginger garlic paste chilli powder, turmeric powder

2.cook rice in 3cups of water witha little oil ,1/2tesp salt and spread in a plate

3.now heat oil or ghee in a pan add whole garam masalas[cinamon,clove,cordamom]let them pop up then add remaining onion and green chillis fry till onionturns brown
4.now add cut vegetables mix well and cover and cook for 2sec. and add curd mixture mix well and cover and cook till vegetables or tender add 1/2 chopped coriender and mint mix and let it cook for 2more min. remove from fire and keep a side
5.now take one heavy bottomed pan and start making layers first you put curry on top of it add a layer of rice and continew like this and end with rice layer and top with chopped coriender,mint and fried oinon[if you want to make a rich biriyani you can make a layer in between with dry fruits like cashews and raisins,badam]
6.keep the pot[pan]on low flame for 10 minutes,after 10 minutes remove from fire and serve hot with rita and any kurma
if you want to cook in a microwave use a microwave dish do as same above and cover with a foil and keep it in microwave high for10 min. or in a otg pre heat oven for 10mins in200c and use a ovenpoof dish cover with foil and keep for 10-15 minutes

BABY POTATO CURRY


INGREDIENTS:-

1/4kg--baby potatoes

1cup--chopped onion

3green chillies-slit

whole garam masala....

1inch--cinamon

3cloves

2cordamoms

1tesp--ginger garlic paste

1/2tesp--cummin powder

1tesp--chilli powder

1/2tesp--garam masala powder

FOR PASTE:-

1tesp--khus khus[poppy seeds]

1tebsp--coconut greated

6--cashews soak all ingredients in little hot water and grind in to smooth paste.

METHOD:-

1.cook potatos in enough water peal outer skin and keep a side.

2.heat oil in a pan add whole garam masala then add chopped onion.green chillies fry till onion turns pink.

3. now add ginger garlic paste turmeric powder,chilli powder ,cummin powder mix well and add potatoes

4.then add ground masala mix well add 1/2cup water let it cook till raw smell goes you can add some more water according to your gravy let it cook for 10 minutes

5.now add garam masala ,chopped coriender leaves.

serve hot with akki roti or roties and pulaos

PACHI SENAGA PAPPU PACHADI[chana dal chutne]

split chick pea chutne,chana dal chutne


INGREDIENTS:-



1 tebsp--chana dal[pachisenaga pappu,split chick pea]



cocpnut--1/2 cup



3-4-green chillies



ginger-1 inch peace



a few curry leaves



1small-onion cut in to peaces



1samll-tomato cut in to peaces



1teasp-cumin seeds



2tesp-oil



salt to taste



METHOD:-



1.heat 1tesp oil in a pan add chana dal and cumin seeds and fry till golden remove and keep aside


2.heat one more tesp oil in the same pan add green chilli,onion ,tomato and fry till vegetables are soft remove and cool and grind with 1/2 cup grated coconut and salt


serve with idlis and dosas,and vadas

SAGGU BIYYAM DOSA[sago pan cakes]

sago-saggu biyyam--sabudana-sabbaki--javuarisi--sago pan cakes[saggu biyyam dosas]



Long back i saw my amma was making dosas with useing a little sago and they are very soft,that time i think why not only with sago and rice with out uard dal and i tryed ,it came very well.Trust me they are very soft and look like aapams but not in taste i think.Now they are my favourites ,because i am abig dosa lover

INGREDIENTS:-

2cups--raw rice

1cup--sago[saggu biyyam,sabudana]

salt to taste
METHOD:-

wash and soak rice for 3hours in enough water and soak sago in water for 1 hour and grind with salt in to a smooth paste and leave it for over night next day morning you can make dosas.
Heat apan and greas with little oil and pour 1laddle full of batter and spreed in to rounds like pan cakes sprinkle 1/2tesp oil on it cover with a lid and cook only one side[dont turn and cook] remove from pan and serve hot with channa dal chuteny or onion chuteny

dont over heat the pan make this dosas in amedium heat once you spread dosa you can cook in ahigh flame.
Best combinaton of chutney s are for this Saggu biyyam Dosa ... Tomato chutney or Pachi senaga pappu pachadi

KADAI PANEER PULAO


Pulao's and biryani's are most popular meal in India This one pot meal's are my favourites,because we can get what ever we need for our body in one day there will be in one pot. This rice goes well with cucumber yogurt raita.and you have to make this rice in kadai[wok].
INGREDIENTS:-
200gms.--paneer[indian cheese]
1cup basmati rice,cooked in 2cups of water
1tesp--coriander seeds
1tesp--cumin seeds dry rost both of them and make a coarse powder
FOR TEMPERING:-
1inch peace--cinamon
4whole--cloves
4whole-cordamom
1sliced-onion
1medium-tomato sliced
1big -capsicum cut in to cubes
1tesp-turmeric powder
1tesp-chilli powder
2tesps-dry fenugreekleaves[kasoori menthi]
1/2tesp-garam masala
2tebsp-coriander leaves for garnishing
METHOD:-
1.cook rice in 2cups of water with a little oil and spread in a plate let it cool.
2.Heat oil in a pan ad cinamon,clove,cardomom then add sliced onion fry till onion become soft,now add paneer and stir for 2minutes
3.now add ginger garlic paste mix one time,then add capsicum peaces stir once
4.now add powder masalas one by one turmeric powder,chilli powder mix in between cover and cook for 2minutes.
5.now open and add tomato peaces ,coriander powder ,garam masala powder stir once add dry fenugreek leaves ,salt to taste mix well and add cooked rice mix well togather all the ingredients combain well
6.remoe from fire and garnish with chopped coriander leaves
serve hot with cucumber raita

MANGO MILK SHAKE




Another very popular and tastey drink with mango in mango season,if we prepare this drink with fresh ripe mangoes that taste will be better then tinned mango pulp are any other substitute


INGREDIENTS:-


2cups ripe mango peaces


1/2lit whole milk


2tebsps-sugar[you can adjust sugar according to your taste]


1scoop vanilla ice cream




1.Blend mango peaces in to pulp add 1cup milk and blend for 10sec.

2. now add sugar remaining milk and blend for 30sec.

3. Add ice cream and blend for3-5sec. and serve chilled top with 1scoop of ice cream

if you are in dite dont use ice cream and use low fat milk.
