MINT CHUTNEY (PUDINA PACHADI)

Mint leaves --- 2 cups
Dry red chilies --- 15 no or according to your taste
Coriander seeds -- 1 tea sp sp
Cumin seeds --- 1 tea sp
Salt to taste
Jaggery ---- 1tea sp
Tamarind --- 1 inch piece soaked in little water
oil ---- 1 tea sp
METHOD:---
Heat oil in a fry pan and add coriander seeds, cumin seeds and red chilies and fry till light golden color remove and grind in to a fine powder.
Now add mint leaves to the same pan and stir for 2 sec. add this to coriander,cumin and red chili powder then add jaggery,tamarind,salt to taste add very little water and grind in to a smooth paste.
This chutney will be a great choice with rice, dosa and idli.

Wat a colourful chutney, i love the aroma of mint leaves much, this chutney goes awesome with steaming idlies na, just drooling over the spicy chutney..

I love the aroma and flavor of Mint, my mint has survived the Winter although I don't get enough to make chutney right now. looks mouthwatering! :))

This mint chutney looks nice and very different from the usual. Like the color guess it would be really spicy too with all those chillies.

Lovely mint chutney.I love the arma of mint,though I rarely make a mint chutney.family does not like mint much.This is perfect with Idlis.

i want to know how many days does the pudhina chutney can be kept whether in the fridge or outside. Will it get spoiled if we keep outside, kindly let me know.

Hi Kalyani this pudina chutney will stay for 1 week out side and you can keep this in the fridge for 1 month atleast......
